Tam’s Tasty Potato Pizzas

Serves 4


  • 4 medium potatoes
  • 1/2 onion, finely diced
  • 1 clove garlic, crushed
  • 1/4 red capsicum, finely diced
  • 3-4 button mushrooms, finely diced
  • 3 sun-dries tomatoes
  • 2 slices salami, diced
  • Parmesan cheese
  • 1 tbsp fresh herbs

  1. Slice potatoes nearly all the way to the bottom but leave a couple of cms at either end unsliced (also know as Hasselback).
  2. Brush with oil, wrap in foil and bake until potatoes are just soft.
  3. Meanwhile, heat oil in a pan, fry onions and garlic until slightly caramelized.
  4. Add capsicum, mushrooms and fry for a further two minutes. Add fresh herbs, salami, and sun-dried tomatoes.
  5. Fold down foil of baked potatoes and add fried ingredients between slices. Top with parmesan cheese.
  6. Bake for a further few minutes until cheese is golden.
  7. Enjoy!
