3 rashes of bacon (rind removed and cut into 2 cm squares)
2 eggs
PERFECT WITH Blue Potatoes
ALSO GREAT WITH Yellow Potatoes
INSTRUCTIONS
Heat oil in a heavy based fry pan until hot.
Layer potatoes in a pan and cook over a medium to high heat, flipping over potatoes until just crispy (not all potatoes will be crispy but that is ok – some will be nice and soft others crisp).
Add bacon, flipping regularly until cooked.
Crack in eggs, stir them through the potatoes and this will bind everything together.
