Potato, Bacon, Spinach & Eggs

Serves 4

INGREDIENTS


  • 4 red potatoes, diced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 red onion, sliced into thin wedges
  • 150g bacon, diced
  • 4 eggs, poached
  • 2 handfuls of baby spinach
  • Cracked pepper

INSTRUCTIONS


  1. Par boil diced potatoes in salted boiling water for 5 minutes, drain and allow to dry.
  2. Heat a large pan to medium high and add oil and butter. Add the potatoes, bacon and onions and cook, tossing, until becoming brown and crispy.
  3. Throw in the spinach, season well and toss through.
  4. Remove from heat and divide into four bowls.
  5. Cook fried eggs to top each bowl. 

TIP: Perfect as a quick and filling family breakfast!
