Mash Potato with Chives & Garlic

  • 1 kg Red potatoes
  • 100g butter
  • 100ml cream
  • 1/2 bulb garlic
  • 1 bunch chives (finely chopped)
  • 50g parsley (finely chopped)
  • Salt
  • White pepper

  1. Peel potatoes and cut in half, put in a pot of cold salted water, bring to boil, and then turn down to a simmer for 15-20 minutes.
  2. In another small pot, put garlic, butter, cream, salt, and pepper, bring to boil, take off heat to infuse for 10 minutes, remove garlic.
  3. Once potatoes are tender, strain through the colander, return to heat, allow to steam dry for 5 minutes.
  4. Mash potato, add cream infusion slowly, until creamy mash potato texture, season with salt and pepper.
  5. Add chopped chives and parsley, stir in, and serve.

TIP: Save time and leave the skin on!
