Light & Fluffy Mash

Cooking Time 20 minutes

  • 8 large potatoes, coarsely peeled and diced
  • 100ml simmering low fat milk or vegetable stock
  • 1 tsp olive oil
  • Sea salt & white ground pepper
  • Ground nutmeg

  1. Soak diced potatoes in cold water for 30 minutes.
  2. Boil saucepan of water with a steam basket and steam potato for 15 minutes with the lid on.
  3. Drain the water from the saucepan, pop in the potato and steam potato dry for 4 minutes with the lid off, shaking the pot so the potatoes don’t stick and burn.
  4. Crush potato with masher then add simmering milk, oil, and seasoning.
  5. Beat potato until fluffy.

TIP: Soaking the potatoes before steaming removes excess moisture and the result is light, fluffy mash!
