BBQ Potato and Salmon Skewers

Serves 4


  • 12 baby potatoes, cut into similar sized pieces (halves) or left whole if small
  • 500g salmon fillet, cut into 8 similar sized chunks
  • 1 lemon, sliced into rounds
  • 2 tbsp fresh or dried dill
  • 1 tbsp olive oil
  • Store bought dressing
  • Salt and pepper

  1. Par boil the baby potatoes in a large pot of salted boiling water for about 8 minutes or until they are fork tender. Drain and allow to dry in the colander.
  2. Using a long metal or wooden skewer first pop on a potato, then a piece of lemon, then salmon, repeat and then finish with another potato. Finish all skewers.
  3. Drizzle with oil and dust with dried dill.
  4. BBQ or pan fry until the potatoes and salmon have some nice crispy edges on each side.
  5. Season well.
  6. Serve with dressing or a squeeze of lemon and fresh salad.
